I have a Delta Amex Platinum Card.
Do I earn AMEX Membership Rewards or do I earn Delta SkyMiles?

You are earning Delta miles, not AMEX points, so you cannot convert or use your Delta miles for anything else.
If you had an AMEX Platinum card, then you would earn Membership Rewards for other things.
