I have a Delta Amex platinum card. Can I change my Delta points to anything other than flights?

No, you are earning Delta miles, not AMEX points, so you cannot convert or use your Delta miles for anything else. If you had a AMEX Platinum card, then you could use your Membership Rewards for other things.
